Roxanne: I remember the exact moment the idea of THE PROBIOTIC CHEESE
COMPANY was created. Mark and I were at the Vermont Cheesemakers Festival
in Shelburne, Vermont in July of 2012. We and hundreds of other people were
sampling many wonderful cheeses, but most of which were made from
pasteurized milk and had lost the natural health benefits from living cultures.
Mark said “Cheese is a nearly perfect food, but because of pasteurization, the
healthy naturally probiotic cultures are destroyed. What if we can make a
pasteurized cheese that is healthier by putting back the live probiotic cultures?
Let’s make Probiotic Cheese”!
And so it began...
Mark R. Windt, MD is a specialist in Asthma, Allergy and Immunology
and Pulmonary Medicine. He has been a practicing physician for over 30
years and has been a proponent of probiotics for many years, becoming
an expert in the field and has spoken nationwide on the multiple health
benefits of probiotics. He has always had a lifelong passion for cheese
and was the first physician to become a member of the AMERICAN
CHEESE SOCIETY over 25 years ago.
The joining together of Dr. Windt’s medical and cheese background with Roxanne’s business background, was the perfect marriage, culminating in the conception of THE PROBIOTIC CHEESE COMPANY.
After over 3 hard years of working with one of Vermont’s best cheesemakers, Rick Woods... performing constant testing, using different formulations and multiple techniques...
we FINALLY...have created an incredibly delicious and extremely nutritious probiotic cheese!
We wanted to make our probiotic cheese, made from pasteurized milk, a new healthier snack
for children, pregnant women, diabetics, and athletes. Basically it is for anyone interested in
healthy food and being more fit; thus we call our probiotic cheese “THE NEW FIT FOOD”!
We also wanted to make it convenient for you, so we packaged our probiotic cheese as bite
size pieces in a reusable zip lock bag. You can enjoy it right from the bag! We are introducing
two truly delicious flavors, Natural and Savory Pepper PROBIOTIC CHEDDAR CHEESE BITES.
We have put our hearts, our souls, our knowledge and our passion into making this remarkable probiotic cheese as a natural and nutritious way to improve your health. We hope that you love it

Roxanne Barnes has a Masters in Business Administration and owned her own successful Mergers and Acquisitions company in Texas for over 20 years. She has been instrumental in spearheading numerous start up companies. She also has significant expertise in the Energy sector and has been sought out as a consultant by several alternative energy companies. Her enthusiasm for artisanal cheese began with her first American Cheese Society conference in Montreal in 2011.
